THE FORT IS PROUD TO PRESENT “GREEN TABLES” DINNER SERIES
Series is to benefit Les Dames d’Escoffier school garden program
Morrison, CO – This summer and fall, The Fort restaurant will be teaming up with Les Dames d’Escoffier and the Green Tables Initiative to present a unique dinner-lecture series where diners will have the chance to meet the ranchers and farmers who have produced the food for their dinner. Dinners will be $85 per person with $20 of each dinner going toward the Green Tables school garden project. Reservations are required and will be taken through The Fort by calling 303-697-4771.
The dinners will be held once a month from July to November and will each feature different products from the Colorado and Rocky Mountain Region. In the beautiful, fine-dining setting of The Fort restaurant, guests will have the opportunity to hear about farming and ranching practices in Colorado as well as enjoy a special menu created by our Executive Chef, Trevor Dierolf. We will be using fresh, innovative recipes along with historical favorites to create these special menus.
The Les Dames d’Escoffier Civic Agriculture Initiative was introduced to promote community health and well being, enhance the utilization of local agricultural products and increase access to nutritious and delicious farm and garden-fresh food. Through this Farm-to-Restaurant track, we hope to encourage more farm fresh ingredients in restaurants while raising money to give to local schools for garden programs connecting our youth with their food source. Green Tables programs are being held around the country to benefit this initiative. Chipotle has also teamed up with Les Dames d’Escoffier to donate a portion of their sales for one evening to the Green Tables Initiative through Slow Foods Denver. These sales go toward the Colorado chapter’s support of a school or community sustainable projects.
The Fort was recently named one of Denver’s “Top 5 Classic Restaurants” by 5280 Magazine. The Fort is located just 22 minutes southwest of downtown Denver on Highway 8, just north of the Highway 285 intersection. Dining reservations may be made at www.thefort.com or by calling 303.697.4771.

November 5th, 2006 featuring Robert Poland with Mouco Cheese Company, Jim Schott with Haystack Mountain Goat Dairy and Jeff Johnson with Colorado Honey Company
Events will begin at 6:00 p.m. and is $85 per person (tax and gratuity included) with $20 of each dinner’s proceeds going toward the Les Dames d’Escoffier Green Tables Projects. Reservations are required by calling 303-697-4771.
